The idea for Digby Fine English was born on the driveway of a sparkling winery south of Seattle, Washington, in the US., surrounded by sweeping rows of vines on the way up to a glittering winery visitor centre. If English sparkling wine was as good as the critics say, how come we had never even been offered a glass to try, all the times we had eaten out at home in London? Sure enough, when we got back and greedily tried our first several bottles of English fizz, some were beyond good, but none confidently expressed their English identity and intrinsic quality to the world. The spark was well and truly lit.
